Pizza unit middle section had food between 47F and 51F. In the same unit found cheese at 41F. Please monitor this unit and have repaired if can not hold food at or below 41F. PIC did state that the top was open for an after school rush. It was just the middle section on the same three flip top unit. 3/19/25- Top unit is still running at 48F. PIC removed all foods and placed them underneath. Contact company to repair unit.

SEVERE CONTAMINATION: Rodent droppings carry 35+ diseases including Hantavirus (36% mortality rate), Salmonella (20% of cases from rodents), Leptospirosis (kidney/liver failure). Mice contaminate 10 times more food than they eat through urine and droppings.
Code Requirements
IMMEDIATE ACTION: Clean/sanitize all affected areas with 10% bleach solution. Discard ALL exposed food. Seal holes over 1/4 inch (mice) or 1/2 inch (rats). Remove food sources. Install bait stations. Professional extermination within 24 hours.

PIC will need to clean the floor along the walls in the basement of old droppings and parts of the wall falling out. Please do a deep cleaning and have pest control come back out a few times to address this issue. Also the floor under and before cooking equipment will need to be cleaned of some build up.

The exterminator came out yesterday and the report states that there were 5 catches. There was no evidence of mice droppings at the time of today's inspection. All recommendations on the pest report have been addressed. Please contact licensed exterminator to come out and do an inspection before next Friday. Pest report needs to be free and clear of catches.
