Dishwashng Facilities
Based on BISD's observations the basement preparation area dish machine appears to lose its sanitizer prime when out of use for extended periods of time. Staff utilizing the dish machine should check the concentration of the sanitizer frequently and/or prime the unit after an extended period of non-use.

Wiping Cloths Clean Sanitize
Several wiping cloths were observed on the lower counters within the preparation area. Soiled cloths should be stored within sanitizing buckets when not in use. No soiled wiping cloths were observed on top of in use food preparation surfaces.
