Observed raw chicken and shrimp not being properly stored. Staff removed and placed in the proper spots. Observed raw chicken being stored on the middle shelf next to a container with fish inside. The bottom shelf had chicken and meat. Ensure staff is being trained on where to properly store raw meats.
Why This Matters
DIRECT CONTAMINATION PATH: Raw chicken contains Salmonella (23% of samples) and Campylobacter (71% of samples). One drop of raw chicken juice can contaminate entire shelf below. Results in 1-3 million US illnesses annually.

REORGANIZE IMMEDIATELY - Top to bottom: Ready-to-eat foods, Fish/Seafood (145°F), Whole meat/pork (145°F), Ground meat (155°F), Poultry (165°F) on bottom. Use separate coolers if needed. Cover all foods. Train all staff on proper order.

Observed leaves and trash around the dumpster area. Clean grounds around the trash area. Observed grease on the top of the grease container. Clean grease container to remove grease build up. Observed recycling dumpster filled and not able to close properly. Ensure all dumsters are closed and secured at all times. Observed kitchen equipment and co2 tanks and other items being stored outside. Provide proper storage. Co2 tanks need to be secured with a chain.
