An employee was handling ready to eat items with bare hands. Train employees to have no contact with ready to eat foods. (The employee was instructed to wash his hands and put on gloves and the item was discarded)

At the onset of the inspection there was no sanitizer in the low temp dishwasher and there was no reading. Check the dishwasher and be sure that the correct sanitizer levels are reached. (the manager replaced the sanitizer and it was testing properly by the end of the inspection)
