I observed staff dumping egg white from a whole shell egg Staff then rinsed hands without using proper soap/ hot water/ paper towel. I advised said staff to properly wash hands- PIC corrected on site. Discontinue and wash hands properly.
Why This Matters
ILLNESS TRANSMISSION: 70% of foodborne outbreaks traced to poor handwashing. Unwashed hands after restroom carry 10 billion bacteria including E. coli. One contaminated hand can spread bacteria to 7 surfaces in 10 seconds. Causes 48 million illnesses annually.
Code Requirements
Wash hands for 20 seconds minimum with soap and 100°F water: After restroom ALWAYS, Before food prep, After touching face/hair/clothing, Between raw and ready-to-eat foods, After handling garbage, Every 30 minutes during continuous prep, After any contamination risk.

Items in Cold Holding low boy unit were out of temperature - Beansprouts 55F Sprouts with other vegetables 56F Cooked Chicken 62F- PIC it was prepped the put in units about 1hour - I had PIC remove and place in walk in cooler until it reach 41F or below

Live cockroaches was observed at handsink at Front counter and in bucket filled with noodles in basement- PIC discarded noodles and provided a pest control report- I advised him to provide proof of weekly treatment and detailed report from a licensed exterminator company
