Dishwashng Facilities
Repair the temperature dials to the dish machine. The wash temperature should range between 150 and 160 F. The rinse cycle should exceed 180 F. The dials did not indicate that either criteria was met. However temperature strips and an analysis of the wash basin water revealed that the water temperature was in excess of 160 F. A service call had already been scheduled. The drainage rack on the soiled side of the dish machine appears to have a slight leak. The leak should be sealed with caulk or solder. The top of the dish machine should be cleaned.

Wiping Cloths Clean Sanitize
Soiled wiping cloths should always be stored in sanitizer when not in use. Two were observed out of the sanitizer solution during the inspection. The violation was corrected during the inspection.
