Inadequate Facilities/Cooling Methods
The chicken cooked earlier in the day and cooling on the top of the sandwich unit. Provide proper method to cool items from 140F to 70F in two hours and then from 70F to 41F in an additional four hours. (manager spread out the chicken and moved it to the walk-in to cool faster) The tofu in the sandwich unit is above the fill line. Store properly. (Manager had the tofu that was abov ethe fill line moved to the walk-in)
