Cold Holding

The cold items in the front refrigerator are elevated; chicken sandwich with avocado 55F chicken sandwich with mozzarella 49F chicken tortilla 50F yogurt 55F. Provide proper cold holding of 41F and ensure that items are being cooled to 41F before they are loaded into the front open air coolers. (The sandwiches were in the cooler for under an hour according to production records and were able to be cooled in the walk-in the breakfast items needed to be discarded. Thermometer used was verified accurate by calibrating with ice on site)

Why This Matters

THE DANGER ZONE KILLS: Between 41°F-135°F bacteria double every 20 minutes. At 70°F, 10 bacteria become 10,000 in 2 hours, 10 million in 4 hours. Staphylococcus aureus produces heat-stable toxins that cooking cannot destroy. Clostridium perfringens causes 1 million illnesses yearly from temperature abuse. Listeria grows even under refrigeration, killing 20% of victims including pregnant women and newborns.
