Observe large amount of hot <135F tomato sauce in a very large pot placed in ambient temperature. PIC explained that hot sauce is placed in smaller plastic containers then placed on ice. No evidence of proper cooling taking place. Ensure that an ice wand is used or smaller metal containers are used for ice bathing. Monitor temperatures to ensure proper temperatures and times are followed during cooling.
