Above the low temp dish machine a green trash bag is taped on the wall with painters tape covering the A/C unit. Remove both the tape and trash bag. If the wall around the A/C unit needs to be sealed to prevent outside air from entering the kitchen provide the necessary repairs to the wall.

OVERHEAD CONTAMINATION: Peeling paint and debris fall into food. Condensation on ceilings drips bacteria onto prep surfaces. Studies found ceiling tiles harbor Bacillus cereus spores. Restaurant ceiling collapse contaminated food service for 200 guests.
