PIC Performing Duties
New manager on site(Jay) was not as knowledgeable about his HACCP plan and safe food practices as he should be by evidence of the lack of knowledge when asked to view his lab report for the accidified rice as well as how to test the accidified rice.He had difficulty in explaining how to calibrate a metal stem thermometer.He also had food stored at the 3bay sink that was set up for warewashing and pan(s) stored in the handsink.He also used the handsink to rinse his thermometer.He had 210 lbs of meat product out(Please only have small portions of phfs out for prep at a time).Hot cooked teryaki sauce was sitting on floor by grill.

Raw fish sushi product that is packaged for sale and put out for customer sale doesn't have the required labeling disclosing the product contains raw fish.A seperate placard can be put up at the storage case stating that the consumption of raw fish may increase the risk for food-borne illness.Each container needs to state it contains raw product.
