Conformance w/ Approved Procedures
1) test papers wet and old not able to properly test ph of rice per HACCP Plan supply new ph paper for acidification of rice. manager tested rice at time of inspection with ph meter(3.8) ok. 7-13-10 2) test papers not yet at esrablishment spoke with manager about changing Haccp plan to use ph meter.7-13-10 3) vinegar(shiragiku(4.5%)) for recipe in current HACCP PLAN has been changed resubmit new HACCP PLAN with new vinegar name(mirukan (4.1%)) and change of acidity.
