Dishwashng Facilities
The majority of the utensils are dispatched to the main GSU kitchen for cleaning and sanitization. However the cutting boards are cleaned and sanitized within a high temperature dish machine located within the sushi preparation area. During the inspection once the dish machine was turned on it took three wash cycles to hit a proper sanitization temperature. It appears that the unit has to be delimed. The cutting boards will be sanitized in the main kitchen until the machine is serviced.
