They have a HACCP plan for the production of kimchi but they are still toggling between making their own kimchi and adding ingredients to commercial kimchi. The kimchi was stored out of refrigeration at 79F and the pH was 3.4. Provide updated procedures for how the kimchi si being produced and make sure the plan is approved by the department and that is the recipe you use. (they will use commercial kimchi and keep it refrigerated unitl another procedure is approved)
