No mangerial control CFPM is operating with cold food in Low boy at 60F and foods 65F Soiled food contact equipment and also utensil soiled and also Hood sticker is expired since May 2022. Train self and staff to correct and maintain all the above. 11/17/22 No Managerial control and PIC that he have is not properly trained I observed chicken and other redy to eat foods held and asked if there was a thermometer. PIC stated there was none and I asked whats the cooking temperature for chicken which is what they cook she responded with a question 140F.- Re-Train staff on the operating procedures and the proper cooking times and the internal temperature of chicken.
