Manual and Mechanical Warewashing Equipment Chemical Sanitization-Temperature pH Concentration and Hardness (P)
Low temperature dishwasher when tested did not show any sanitizer on the test strip. PIC will call and had repaired and a three bay sink is available to sanitizer equipment.
Why This Matters
INEFFECTIVE SANITIZATION: Below 50ppm chlorine or 200ppm quat, bacteria survive on 'clean' dishes. Above 200ppm chlorine leaves toxic residue causing chemical burns, nausea. 70% of restaurant outbreaks linked to improper sanitization.
Code Requirements
Maintain sanitizer at: Chlorine 50-100ppm, Quaternary Ammonium 200-400ppm, Iodine 12.5-25ppm. Test every 2 hours with test strips. Change solution when cloudy/dirty. Train all staff on mixing procedures.

Ventilation Hood Systems Filters (C)
Hood sticker on cooking line expired in April 2023. Under the hood is two plug in electric ovens and a hot holding cabinet. 6-2-23 Per BFD the hood will need to be cleaned one time each year. The hood was last cleaned in Oct 2022 and PIC will need to provide a Hood sticker that stated needs to be cleaned Oct 2023. PIC will need to call and ask for the proper sticker from the hood cleaning company. Two small electric ovens under it hood.

Code Requirements
Immediate correction required. Follow health code section 105 CMR 590.004. Implement proper food safety procedures. Train all staff. Document corrective actions taken.

At this time PIC is not using the low temperature dishwasher and will order the proper sanitizer for the machine.
