Observed cooked chicken stored on salad bar self station / service line @ 60F. Discussed with PIC to maintain cold holding @ 41F or below. PIC removed and stored in blast chiller. COS
Why This Matters
RAPID BACTERIAL GROWTH: At 50°F, E. coli doubles every 30 minutes. At 70°F, it doubles every 20 minutes. After 4 hours above 41°F, bacteria can reach dangerous levels causing severe illness. Common result: 24-72 hours of diarrhea, vomiting, fever, potential hospitalization.
Code Requirements
Immediately discard foods held above 41°F for over 4 hours. Rapidly cool foods above 41°F if less than 2 hours. Check ALL cooler temps every 2 hours with calibrated thermometer. Repair/adjust refrigeration immediately. Never store food in non-refrigerated areas.

PIC Rosemery stated via telephone the voluntary closure to the food service due to a solar panel outage of all refrigerated units / walk ins on September 19th; PIC stated all foods were disposed; never reported to ISD Health Divison at the time; Instructed PIC to submit documentation to how foods were discarded / disposed; Provide all work oreders for repairs. PIC stated parts ordered and estimated time of repairs within 30 days **Please contact ISDHEALTH@BOSTON.GOV prior to opening to schedule follow up inspection*** Spoke with ISD Health supervisor - authorized Voluntary Closure until November 1st
