Current location being used to bread raw chicken in the rear of the meat room does not have a hand sink in the facinity - remove and relocate to a segragated area in the meat room close to a hand sink and ware washing sink to minimize potential contamination. PIC / Store manager addressed the situation immediately. No raw poultry preperation during time of inspection - ensure proper signage is provided in the area stating as a reminder " raw poultry prep only" with the proper hand washing signage as well to remind staff the importance of proper hand washing when working with raw poultry / foods. Currently this area of the meat room is no longer in operation as meats are coming in pre-packaged. There is a very limited amount of meat cutting actually going on in the meatroom. This area is now satisfactory to use.
Why This Matters
DIRECT CONTAMINATION PATH: Raw chicken contains Salmonella (23% of samples) and Campylobacter (71% of samples). One drop of raw chicken juice can contaminate entire shelf below. Results in 1-3 million US illnesses annually.
Code Requirements
REORGANIZE IMMEDIATELY - Top to bottom: Ready-to-eat foods, Fish/Seafood (145°F), Whole meat/pork (145°F), Ground meat (155°F), Poultry (165°F) on bottom. Use separate coolers if needed. Cover all foods. Train all staff on proper order.

Clean to remove all visible food spills stains and soils inside the single door refrigeration units by the dairy department as well as all other refrigeration /m freezer units where needed throughout the facility

Exposed access panel above the swinging doors leading into the meatroom cover as discussed Blind sheild located at the window area of the meat room above the self service meat case is visibly compromised with holes and soils either remove or replace as as discussed during inspection - Clean to remove obnoxious odors coming from the grease trap under the prep sink of the deli resurface any rusted or corrosive areas as discussed
