Ensure raw poultry being stored in the walk-in units are properly segragated from other raw foods to reduce potential contamination - use barriers if needed or store all poultry on the very bottomshelf as discussed

DIRECT CONTAMINATION PATH: Raw chicken contains Salmonella (23% of samples) and Campylobacter (71% of samples). One drop of raw chicken juice can contaminate entire shelf below. Results in 1-3 million US illnesses annually.

REORGANIZE IMMEDIATELY - Top to bottom: Ready-to-eat foods, Fish/Seafood (145°F), Whole meat/pork (145°F), Ground meat (155°F), Poultry (165°F) on bottom. Use separate coolers if needed. Cover all foods. Train all staff on proper order.

There is a designated mop sink area in the facility but it is in another section of the food prep area the distance appears to be very far away - there is an exposed slop sink area in the main kitchen - spoke with PIC during inspection and he decided on enclosing the area to reduce potential contamination
