In hot holding unit found chicken 98F and pork 107F. PIC did not know to reheat to 165F before it can go into a hot holding unit to be held at 135F or higher. PIC removed and reheated. Please review with staff.

Food Safety and Allergen posted are for the two owners. Someone that works at this location will need to be Food Safety and Allergen trained. Each location will need to have it own certificate. They can not be copied and posted in multiple location. I was told owners do not work at the locations. Please provide certificates or paperwork that someone is signed up to take a class.
