Large pan of rice and beans inside of the walk-in cooler that was used for a catering event from the previous day with an elevated temperature of 54F (as stated by management). Discontinue and ensure proper cooling methods are in place. Cooked rice and beans were voluntarily disposed of at the time of the inspection. Management stated at the time of the inspection that the rice was not being used for service but for food cost purposes.
