The handsink is completely blocked with equipment and the heater was turned off because they need to use two pannini grills during lunch. Make sure the handwash sink is working during all operating hours.

PIC Performing Duties
The certified food manager Andres Sandoval is on the truck and the truck is operating with with the handsink blocked and turned off. Make sure the certified food manager is monitoring the food safety of the truck. No water in a food establishmnet is an imminenet health hazard. The manger needs to take active managerial control and correct risk factor violations.
Why This Matters
EXTREME RISK: Without active management, ALL five CDC risk factors go unchecked. Studies show restaurants without certified managers have 2.5 times more critical violations. Lack of supervision leads to: temperature abuse (bacteria double every 20 minutes), cross-contamination spreading pathogens, sick employees working with food, improper cooking allowing pathogen survival. This single violation enables conditions for major outbreaks.
