Sides of fryers and other peices of cooking equipment on the hot line are soiled with grease buildup carbon buildup food encrustments and soils. Clean all of the cooking equipment. Remove buildup of substances noted. PIC reports the old cleaning compny used to clean the cooking equipment and surfaces around the hood. She noted the new company; "Right Call Service" on a recent hood cleaning did not clean the items mentioned. I explained that regardless of who does the cleaning cleaning the cooking equipment and surrounding surfaces should be done on a regular basis.

This violation directly contributes to foodborne illness risk
Code Requirements
Immediate correction required. Follow health code section 105 CMR 590.004. Implement proper equipment procedures. Train all staff. Document corrective actions taken.

Hood filters have grease buildup. Clean hood filters remove grease. In 2 seperate sections where the filters come together there is a gap in coverage to the hood system. Provide hood filters that do not leave any gaps in the hood system coverage. PIC reports the BFD inspector cited the same violation during an inspection today. Wall behins the cooking line is soiled with food encrustments grease and soils. Clean wall. Floor under and behind the cooking equioment has buildup of grease food soils and encrustments. Clean the floor area previously noted.
