At the time of reinspection I observed the 2 of the handsinks either blocked with dustpan trash barrel and food debris inside sink. The hand sink on the cookline was completely dry. - Staff was advised to wash hands in the sink closest to them. 3rd handsink in warewash area is leaking - Train staff the importance of handwashing especially when handling food

I observed staff handling ready to eat food cut fresh strawberries and placing them in a cup without gloves- Discontinue cutting and prepping RTE foods with proper handwashing and glove use. I also observed at the bar where staff was cutting strawberries out of the carton. - Discontinue cutting fruits at the bar and washing the fruit there ; Prepare in prep area. Alot of immature flies in the area.

15 Cases of uncooked breadsticks in the dry goods area when on box says KEEP FROZEN. PIC showed me Procedures stating they can leave at room temperature. - Provide the information where it's no danger keep the raw bread product out of freezer and the step by step processes 11/25/22- Raw Steak enclosed inside of ROP type bag being thawed in a soiled prep sink- Discontinue thawing inside of prep sink to properly that slit the bag place on hotel pan and thaw under refrigeration.
Why This Matters
SURFACE CONTAMINATION: Room temperature thawing allows surface to reach 70°F+ while interior frozen. Bacteria multiply 7-fold every hour. Creates perfect conditions for Salmonella, Campylobacter growth. Major factor in poultry-related illnesses.

Approved thawing methods ONLY: Under refrigeration (best), Under cold running water (70°F) in sink, In microwave if cooking immediately, As part of cooking process. NEVER at room temperature. Plan ahead for slow thawing.
