Food Protection
A food delivery was accepted shortly before the start of the lunch service. Due to limited walk-in storage four cases of vegetables were observed outside of the walk-in during the lunch service. Staff were in the process of breaking down the boxes between tasks. If the boxes cannot be promptly stored away the deliveries should be accepted earlier. One of the delivery-men placed a bag of ground pork into a partial case of daikon. The bag was removed during the inspection. Several items were observed stacked on the floor of the walk-in. The items were stored within 5-gallon food grade buckets. The owner should consider increasing the volume of refrigerated storage within the establishment if the contents of the walk-in cannot be readily packed onto the available shelving.
