The central undercounter refrigeration unit was operating at approximately 45 F during the investigation. The unit contained no phf's during the investigation. The chef adjusted the thermostat during the inspection. If the adjustment does not resolve the potential cold holding issue the unit must be serviced so that it maintains an internal temperature and product temperature below 41 F.
