PIC Performing Duties
PIC on site not ensuring proper compliance with requirements of food Codes. Staff on site state" We just got a big order.... "Please have a PIC on site at at times (busy or slow) who is knowledgeable about Code requirements and who is ensuing Compliance.
Why This Matters
EXTREME RISK: Without active management, ALL five CDC risk factors go unchecked. Studies show restaurants without certified managers have 2.5 times more critical violations. Code Requirements
