Clean and maintain clean the portable storage racks and the interior of the donut storage container. Flour crumbs and glaze were observed on the bottom and shelves of the racks. The racks must be maintained clean to eliminate a potential food source for the rats in the basement. Clean and maintain clean the mixer the mixing bowls and the bulk food storage containers. Similar to the storage racks the spilled and accumulated sugar and flour provide a potential source of food for the rats in the basement. Clean the sides of the fryer and the adjacent food preparation table to remove the grease and food debris. This material is a potential source of food for the rats that are entering the basement.

Improper Maintenance of Floors

The floor beneath the fryer and grill needs to be cleaned. The floor to the right of the two adjacent refrigeration units needs to be cleaned. If the floors are maintained clean the rats will not access the kitchen.
