Commercially prepared chicken noodle and clam chowder soups reheated in boiled water and placed in a table for an hour (100F). PIC stated that they will be separated in smaller portions and placed for freezing. Instructions read that soup must be thawed in temperature control for immediate re-heating/serving. Ensure that instructions are followed. Ensure that proper cooling take place (2 hour 140F to 70F another 4 hours from 70F to 41F. PIC moved the soups to the freezer.

Low Temp Dish Machine not registering any chlorine sanitizer solution. Sanitizer container almost empty. PIC replaced it and it registered 50ppm. Ensure that it is maintained between 50ppm-100ppm all the time.
