When sushi rice is tested with strips a result of 3.6 is determined by operator and when records are reviewed many results in the 3.3-3.9 range were recorded. Sushi HAACCP plan calls for a target of 4.1 so provide change ot recipe or repair meter or replace strips to ensure rice is testing at proper target of 4.1.
