A frozen container of falafel was being thawed in stagnant water. If a basin of water is to be utilized for thawing the water must be flowing. A better practice would be to thaw the product within a food preparation sink or overnight within the walk-in refrigerator.

Food Utensil Storage
The storage of in-use knives in stagnant water should be discontinued. Bacteria require a source of food water and a moderate temperature to flourish. The knives should be stored soiled and dry for no more than four hours or within the water but at a temperature in excess of 140 F.
