Modern Pest Services must provide a written Integrated Pest Management (IPM) report addressing the documented pest problem (rodents). The IPM must address the steps required to deny the rodents access to the establishment the cleaning deficiencies identified and other steps that may be required to further mitigate the issue. The establishment should increase the frequency of treatment until later determined by the Health Division that rodents no longer represent an issue to the interior of the establishment. The ownership must provide a written log of the pests that are observed trapped and/or discarded.
Why This Matters
DISEASE VECTORS: Mice produce 50-75 droppings daily containing Salmonella, Hantavirus. Cockroaches carry 33 types of bacteria, 6 parasitic worms. Flies regurgitate and defecate on food, spreading E. coli, Shigella. One mouse can contaminate 10 times more food than it eats. Pest allergens trigger asthma in 26% of inner-city children.

Provide repairs to the dish machine. Whereas the service utensils are of a non-porous material the three-basin sink may be utilized for all wares and equipment until properl repair to the dish machine can be completed.

Improper Maintenance of Floors
Clean the floor beneath the refrigeration and cooking equipment. Rice and food residue was observed beneath several of the upright refrigeration units the shelving beneath the fryer and behind the sushi preparation area. Discontinue the use of cardboard on the floor.

CONTAMINATION RESERVOIR: Damaged floors harbor bacteria in cracks. Standing water breeds Listeria, Pseudomonas. Broken tiles create pest harborage. Floor contamination spreads via shoes, equipment wheels, and dropped items. CDC found floor drains positive for Listeria in 40% of retail delis.
Code Requirements
Floors must be: Smooth and non-porous in food areas; Properly sloped to drains (1/8 to 1/4 inch per foot); Coving at wall junctures sealed; No cracks, holes, or missing tiles; Grout intact and sealed; Cleaned daily or more frequently; Dry except when cleaning.

Improper Maintenance of Walls/Ceilings
Modern Pest Services documented in their November 2013 and January 2014 reports that the hole behind the furnace needs to be patched. This and all other wall penetrations must be patched. All stored goods chemicals and equipment in the rear dish room should be temporarily removed so that the walls and baseboard behind can be properly inspected for rodent access.
Why This Matters
OVERHEAD CONTAMINATION: Peeling paint and debris fall into food. Condensation on ceilings drips bacteria onto prep surfaces. Studies found ceiling tiles harbor Bacillus cereus spores. Restaurant ceiling collapse contaminated food service for 200 guests.

Walls/ceilings must be: Smooth and washable in food areas; Light-colored for easy soil detection; Free of holes, cracks, peeling paint; Sealed at all joints and attachments; Clean and free of grease, dust, cobwebs; Non-absorbent in areas subject to moisture.
