Mechanical Warewashing Equipment Hot Water Sanitization Temperatures (Pf)
The high temp machine is in use but the temperature is only reaching 155F measured on the irreversible thermometer. Train employees to be sure the equipment is reaching the proper temperature before it is used to be sure equipment is getting cleaned and sanitized. (The dishwasher company was onsite before the end of the inspection to repair the machine)

Improper equipment maintenance can harbor bacteria and contaminate food
Code Requirements
Immediate correction required. Follow health code section 105 CMR 590.004. Implement proper temperature control procedures. Train all staff. Document corrective actions taken.
