Mechanical Warewashing Equipment Hot Water Sanitization Temperatures (Pf)
The high temperature dishwasher is washing at 160F and rinsing at 178F but the temperature on the temperature is only reaching 153F. We ran the dishmachine three times and it never reached above 153F at the plate. Provide proper temperature to be sure that equipment is being properly sanitized. (all items will be santized in the three bay sink and air dryed until the machine is repaired)

Code Requirements
Immediate correction required. Follow health code section 105 CMR 590.004. Implement proper temperature control procedures. Train all staff. Document corrective actions taken.
