During lunch kitchen staff were fully cooking chicken breasts and holding them in a clean and sanitized metal container without any temperature control. Although the product was not out of control for more than two hours a variance for this process has not been approved by the Health Division. The chicken was discarded and in the future the chicken will be hot held on the grill.

Installed and Maintained

The drain to the basement dish machine was clogged. A service call had been placed. Management will contact BISD when the situation is mitigated. Staff are utilizing the three-bay sink to clean and sanitize wares until the drain can be repaired. The glass machines in the bar area were operating properly.
