Several dried ducks hens and other items were observed hanging within the walk-in refrigerator. If items are to be hung within the walk-in the food items should not contact items that are not routinely cleaned and sanitized (buckets of food storage shelves and the sides of the walk-in). Store the hanging items above and away from potential sources of contamination.

Improper Maintenance of Floors
Heavy grease was observed within the rear grease storage area to the left of the walk-in. The floor should be washed to remove the grease. The grease is a potential food source for pests. The floor of the walk-in and around the fryers should also be cleaned to remove food soil and grease.

CONTAMINATION RESERVOIR: Damaged floors harbor bacteria in cracks. Standing water breeds Listeria, Pseudomonas. Broken tiles create pest harborage. Floor contamination spreads via shoes, equipment wheels, and dropped items. CDC found floor drains positive for Listeria in 40% of retail delis.
Code Requirements
