The potatoes are stored on a shelf behind the grill and the temperature is 96F. Provide proper hot holding of 135F or above. (The potatoes that were out of temperature were discarded) The soup on the hot holding table is 120F. Provide proper hot holding of 135F or above. (The soup was moved to the grill to be reheated rapidly to 165F)
