No evidence of proper warewashing. Handsinks at cooking line and prep area blocked with items in front or in them. At lower area prep area no other handsink available but the blocked one and full prep taking place. Ensure that proper handwashing takes place all the time.
Why This Matters
ILLNESS TRANSMISSION: 70% of foodborne outbreaks traced to poor handwashing. Unwashed hands after restroom carry 10 billion bacteria including E. coli. One contaminated hand can spread bacteria to 7 surfaces in 10 seconds. Causes 48 million illnesses annually.

No evidence of proper warewashing at this time. Three bay sink not set up and drain plug in sanitizing bay does not block the drain. Provide proper drain plugs and set three bay sink properly to Wash Rinse and Sanitize. PIC will immediatley buy new plugs.
