They are installing a new dishwasher but it is not hooked up yet and employees are unfamiliar with setting up the three bay sink. Train employees in warewashing so items are properly cleaned and sanitized in the dishwasher or sink. (The sink was setup with 200 ppm quats after some trial and error)

There is some grease buildup along the back of the cooking line. Clean to remove. The back door is allowing light to enter along both sides of the door. Install a door sweep or otherwise repair the door so that it is rodent proof.
