There is one old fly strip suspended from the basement preparation area ceiling. The strip is not directly over any food preparation surface. It should be removed. The preparation staff stated that it would be removed once he had completed his food preparation activities.

Improper Maintenance of Floors
There is a soft spot / flex in the rear of the walk-in refrigerator. It suggests that rot may be present beneath the metal flooring. The support beneath the flooring / floor should be repaired over the next 6-months before the next scheduled inspection. The floor in the walk-in and basement was clean.
Why This Matters
CONTAMINATION RESERVOIR: Damaged floors harbor bacteria in cracks. Standing water breeds Listeria, Pseudomonas. Broken tiles create pest harborage. Floor contamination spreads via shoes, equipment wheels, and dropped items. CDC found floor drains positive for Listeria in 40% of retail delis.
