Sliced tomatoes and guacamole prepared from the morning ?ith elevated temperatures between 48-62F. Discontinue and ensure proper cooling methods are in place prior to being placed out for service. Foods were removed at the time of the inspection and placed into a refrigeration unit that was at below 41 F to continue the cooling process.
