They are cooling items pasta that was recently cooked and garlic that was recently minced in the undercounter refrigerated drawers. Provide proper cooling methods to be sure items cool from 135F to 70F in two hours and then from 70F to 41F in an additional four hours. (The manger removed the pasta and garlic and started cooling them in the walk-in refrigerator in smaller containers and in ice baths)
