Non-Food Contact Surfaces

The dessert upright salad undercounter and produce walk in refrigerators were operating between 45 and 50 degrees F. Several of the coils were encased by ice. Remove all potentially hazardous foods from units until units can be repaired. The units must all be operating at 41 degrees or below. The bar beverage refrigerator has 0.5 inches of stagnant standing water on the bottom. Repair the unit so that it drains properly. During the inspection on 7-15-08 no condensate was observed within the bar refrigeration unit. However the salad unit within the main kitchen and the produce unit within the preparation area were not operating properly. The two units must be repaired so that they maintain an internal temperature of 41 degrees or below. The walk-in and other refrigeration systems had been repaired and inspected by a service contractor. Final repairs to the salad unit within the main kitchen had not been completed. BISD will return to reinspect.
