PIC Performing Duties
There is a cryovac machine in the kitchen but they do not have a variance or HACCP plan. Remove the machine until a plan has been approved by the Health department. They are making ice cream at the location but they are not having it tested. Have the ice cream tested by a lab and apply for a frozen dessert manufacturing permit.
