A sufficient amount of clean in use wiping cloths being stored on the cooking line underneath cooking equipment but are not properly stored or covered due to its location - addressed immediately any visible splintered or burnt wooden utensils in the kitchen shall be removed immediately - use commercial grade utensils only - wooden utensils can be used in food service nalthough it is in a very limited capacity as discussed during inspection-

Several small areas of the ceiling in the kitchen / prep area have some exposure of wooden unsealed surfaces and loose wiring - address as we discussed during inspection -there are a couple of other wooden shelving units in the basement unfinished - all surfaces shall be clean - smooth - durable and non absorbant as we discussed during inspection segragated area of the wall in the basement directly behind the opening cover to the chemical dish machine contantly being used has been compromised over time with visible heavy stains and soils from condensation steam and are unable to be cleaned properly - replace
