Separation Segregation Cross Contamination

Several omelettes were observed stacked on an egg flat and a clean serving tray. The representative from the health division explained that the egg flat is a potential source of salmonella contamination and that the egg flats should not be reused. The egg flats were discarded along with the eggs that had been placed on the flats after removal from the grill. The BISD explained that the egg flats had been recently linked to salmonella outbreaks within New England.

Cross-contamination can spread dangerous pathogens throughout the facility

When the kitchen inspection began the chef placed three sealed commercial containers of food within the hand sink. The representative from the health division explained that nothing is to be stored or placed within the hand sink for any amount of time. The packages were removed.
