Equipment Thermometers
Pressure gauge on dishwasher reads between 40 psi to 65psi. Information plate states should be 20psi. Range is between 15 to 25 psi. Have repaired. PIC stated that the dishwasher repairman came out and said that the dishwasher is working properly and PSI is set to the right numbers. He said that it is the water pressure coming in from the building/street. Provide paperwork from repair company and build maintance with regards to this issue.
Why This Matters
This violation affects overall sanitation and food safety
Code Requirements
Immediate correction required. Follow health code section . Implement proper equipment procedures. Train all staff. Document corrective actions taken.

Improper Maintenance of Walls/Ceilings
Clean wall behind cook line and pipes in hood above cooking equipment. PIC stated that she cleaned the wall and still getting some leaking/ stains. Hood problem and to be addressed and repaired. Caulking is coming out in spots. Hood sticker is expired as of June 8th 2015. Hood needs to be cleaned as discussed in passed inspections.
Why This Matters
OVERHEAD CONTAMINATION: Peeling paint and debris fall into food. Condensation on ceilings drips bacteria onto prep surfaces. Studies found ceiling tiles harbor Bacillus cereus spores. Restaurant ceiling collapse contaminated food service for 200 guests.
Code Requirements
Walls/ceilings must be: Smooth and washable in food areas; Light-colored for easy soil detection; Free of holes, cracks, peeling paint; Sealed at all joints and attachments; Clean and free of grease, dust, cobwebs; Non-absorbent in areas subject to moisture.
Corrective Actions
Repair all holes within 14 days; Repaint with washable paint; Replace damaged ceiling tiles; Seal all penetrations; Clean walls and ceilings monthly; Fix any leaks immediately; Install FRP panels in splash zones
