Tuna salad and fresh gaucamole made from the morning with an elevated temperature of 50F. Discontinue and ensure all potentially hazardous foods are being properly cooled prior to being placed out for service. Cooked chicken inside of the 2 door deli cooler with an elevated temperature of 50F. PIC removed and placed chicken into the walk-in refrigeration unit to maintain a temperature of below 41F.

Small 2 door deli style cooler with an elevated temperature of 48F. All foods inside of the unit had just been prepared from earlier in the morning. PIC removed all potentially hazardous foods from the unit at the time of teh inspection. Discontinue use unless the unit is able to maintain a temperature below 41F.
