Splash guard at handsink next to meat grinder in disrepair. Repair/replace. PIC provided invoice for gaskets on order to be installed.

Improper Maintenance of Floors
Floors throughout the establishment with missing grout and broken tiles at cookline and inside refrigerated walk in units. Repair all floors and areas with missing grout and tiles. Floors soiled and with standing water dish area and cookline in missing grout seams and regrout floors. Thoroughly clean floors of soils and standing water. Stairs leading up to laundry area with broken tread and heavy buildup of grease. Repair. Clean to remove. Small hole in floor in paper storage room upstairs. Repair.

CONTAMINATION RESERVOIR: Damaged floors harbor bacteria in cracks. Standing water breeds Listeria, Pseudomonas. Broken tiles create pest harborage. Floor contamination spreads via shoes, equipment wheels, and dropped items. CDC found floor drains positive for Listeria in 40% of retail delis.
Code Requirements
Floors must be: Smooth and non-porous in food areas; Properly sloped to drains (1/8 to 1/4 inch per foot); Coving at wall junctures sealed; No cracks, holes, or missing tiles; Grout intact and sealed; Cleaned daily or more frequently; Dry except when cleaning.

Door on third floor with delivery hoist with daylight emiting through permaters of doors and threshholds. Seal all outer openings around door. Extension granted. Spoke with contractor Chris Jaber from Restaurant Restoration who is fabricating an encased metal door frame to custom fit perameter of hoist loading doorway. Too email detailed work orders and invoices to health division.
