Hot Holding
At reinspection found fish dish 129F chicken dish 124F soup 130F and spaghetti dish 124F. PIC will need to removed and reheated to above 165F and put back into hot holding. Hot holding unit needs to hold food at or anove 140F at all times. Violations from 4/18/18 Fish dish 117F and Liver dish 125F. PIC removed reheated and turned up hot holding unit to proper temperature. Must be hot held above 140F.

This violation directly contributes to foodborne illness risk
Code Requirements
Maintain all hot TCS foods at 135°F or above; Cannot use hot holding equipment to reheat

All bulk food containers must be labeled to whats in container. Sugar etc.
